Cucur Udang or prawn fritters are a delicious street food in Malaysia. We usually have them at tea time. They should have a crispy outside and a soft texture inside and are delicious served with homemade dipping sauce.
Roti Jala is a Malaysian tea time lace pancake made with wheat flour, eggs, turmeric and coconut milk. The batter is then drizzled onto a hot pan while creating a swirly or circular motion to create the lace effect. These beauties are served with Malaysian Creamy Chicken Curry.
There are so many variations of chicken curries in Malaysia. The diversity of our nation has to lead to us having the privilege of Chinese, Indian and Malay curries. On top of that, we also have the influence of Portuguese with the Nyonya curries and Dutch with the Devils curry. My version of curry hails from my hometown on the East Side of Malaysia. Chicken breast cooked in a homemade spice of toasted coriander, fennel and cumin then blended with shallots, ginger and garlic, and lemongrass and coconut cream.
Glutinous rice pandan aromatic balls filled with palm sugar, poached in boiling water and then rolled into fresh desiccated coconut.
Zaleha Olpin lives Bristol with her husband and her youngest daughter aged 12. Trained as an Accountant, Zaleha left her job in a Multi-National Oil & Gas Company to travel with her husband around the world. Having lived in Korea, the Middle East and Australia, she considers herself to be a well versed in international cookery. Zaleha still goes back to her childhood and traditional cooking when comes to having family or guests for supper.
Zaleha is a contestant for the Master Chef UK 2018. You will see her in action cooking for John and Greg which will air starting on the 26th of February. Zaleha is also amid writing her first cookery book.
Zaleha grew up in Malaysia and was taught to cook traditional Malaysian dishes by her mother from an early age. Her parents owned traditional Malay restaurants as she was growing up, where she helped at a young age. Besides that, her family had a catering company that caters to sumptuous Malaysian weddings and gatherings. Her passion for cooking has been in her since she was a little girl.
One of her greatest ambitions in life is to be able to teach Malaysian Cookery. She wants people to know how special Malaysian food is due to the multicultural populations in Malaysia.
