Expert free-from baker and pastry chef, Marianne Stewart, and Cookhouse owner-nutritionist Sam Waterhouse will be hosting this special workshop on healthy baking. As the author of a free-from healthy baking book, Nourish Cakes, Marianne will show you how to put a celebratory spin on free-from cakes & desserts. The emphasis will be on using exciting, fresh and flavourful ingredients that pack a punch to ensure it tastes better than any regular cake.
The workshop covers a few of Marianne’s favourite recipes from the book, with a mix of demo and hands-on recipe-making to cover as much as possible! We will be making Avocado, Olive Oil and Chocolate Mousse, glorious Vegan Cheesecakes and Orange, Poppyseed and Squash Cakes. Sam will be on hand to explain the nutritional know-how, such as how to swap in healthier ingredients, and why Marianne’s recipes work to give your body a healthier, more nutritious alternative to regular sweet treats. Marianne will also use the recipes to guide you through all the know-how for gluten-free, dairy-free and vegan baking so you can have the confidence to re-create a whole wealth of free-from treats at home. You will have the chance to eat the goodies made in class, as well as take home the baked treats you make yourself.
Recipes will cater for dairy-free, gluten-free and vegan diets, but please note that eggs will be used in some recipes (with vegan alternatives provided) and the kitchen may contain traces of wheat flour and other allergens. As a professionally trained and experienced pastry chef, Marianne is passionate about introducing others to her craft. She works as a baking & decorating tutor, food stylist and food writer, with anything cake-related.
Five years ago, when her sister was diagnosed as gluten-and dairy-intolerant, Marianne turned her hand to adjusting, tweaking and developing recipes her sister could enjoy, without having to compromise on quality or flavour.
She wrote her first baking book, Nourish Cakes (publ. Quadrille, 2018), to share the kinds of recipes that nourish the body as well as the soul. Her cake recipes cater for people with various dietary restrictions, whether vegan, gluten-free, dairy-free, using more nutrient-rich and healthy ingredients.
With numerous recipes and cake projects in print, including Wedding Cakes, The Telegraph Magazine, Cakes & Sugarcraft and Vegan Living, she is a seasoned food writer and recipe developer.
Marianne teaches regularly for Squires Kitchen International School in Farnham, as well as classes in Bristol, London and abroad.
